My Favourite Meals to Cook at Home

Following on from my day 1 food log. . .

Day 2- 5 substitute:

Breakfast with one of the following:
• Spinach scrambled eggs
• Sweet potato roesti with asparagus wrapped in smoked salmon
• Super Quinoa porridge
• Quinoa Frittata with capsicum, zucchini, coconut oil, onion and rosemary

Lunch with one of the following:
• Loaded sweet potato
• Mango and pomegranate salad
• Salmon Patties
• Tuna and red cabbage salad

1830 Dinner with one of the following:
• Raw Zucchini pasta with quorn Bolognese
• Sweet potato, large salad, vegetarian schnitzel with spinach and feta
• Quorn Nachos with Coriander
• Shepherds pie with vegetable and quorn Bolognese filling
• Vegetarian Sausages with a large salad

All ingredients I use are organic (no pesticides!),

Dinner Option: Green Paprika’s stuffed with Quorn Bolognese

  • Basil leaves
  • Salt and freshly ground black pepper

  • Spinach
  • Lemon
  • Vegetarian schnitzels

  • Quorn

  • Coriander leaves
  • Kidney beans – drained and rinsed
  • Chili
  • Olive oil
  • Garlic

Dinner Option: Vegetarian Sausage and Salad

  • Vegetarian sausages
  • Avocado
  • Red onion
  • Rocket
  • Cherry tomatoes
  • Yellow capsicums
  • Feta
  • Spinach
