Here is my healthy Veg and Chickpea Curry – it is one of my favourites and it is very easy, very tasty and even freezes well in Lock & Lock!
Serves 4 – 6 people. Prep Time 10 minutes. Cook time approx 30 minutes.
1 onion diced or half a leek
4 cloves garlic crushed
1 teaspoon salt
½ teaspoon chilli powder
1 teaspoon tumeric
1 teaspoon paprika 1
1 tablespoon ground coriander
1 tablespoon cumin
1 teaspoon garam masala
2 x 400g tins chickpeas
2 x 400g tins chopped tomatoes
1 medium sized head of broccoli chopped (plus any other fave veg)
Big dollop of low fat yoghurt
1 Stir garlic and onion over medium heat to soften
2 Add in chilli powder, salt, tumeric, paprika coriander & cumin. Stir in for a minute.
3 Add drained chick peas and un-drained tomatoes.
4 Simmer covered for 20 minutes – give an occasional stir.
5 Add broccoli & garam masala and simmer for another 10 minutes.
6 To serve top with a blob of yoghurt & chopped fresh coriander with naan bread on the side. YUM YUM YUM!
