Healthy Mexican

We hope you have enjoyed our Feb Fitness posts from Nicola! February may be about over, but we hope you’ll stay motivated throughout the year to be the healthiest and happiest you can be! Here’s another recipe from Nicola that we can’t wait to try!

I love spending time in the kitchen figuring out how to make healthy versions of my favourite treats and Mexican is definitely one of my favourites – in particular fish tacos yuuuummmm!!!! It can also be on the table in under thirty minutes….
Fish
I either use prawns and stir fry them with some coconut oil and paprika or grab whatever white fish looks good like ling or monkfish, sprinkle with paprika and bake in foil in the oven.
Tacos
These are so quick to make! And I do this and the sauce while the fish is baking.
200g wholemeal spelt flour
Tablespoon of cornflour
Pinch of nutmeg
Pinch of rock salt
Roughly 400ml water
Put all your dry ingredients in a bowl and slowly mix in water until you have quite a thin batter, the consistency of pancake/crepe batter – if you put in too much and it becomes too runny you can always add in some more flour.
Heat the pan and pour in some coconut oil and cook like a pancake. Pour in batter, swirl around, flip after a minute or so.
Baja sauce
This is definitely the “magic” ingredient!
1/2 cup greek yoghurt
1/2 cup of light/extra light sour cream
2 teaspoons Mexican seasoning
Tablespoon chopped jalapeños from the jar – you can add more if you like a kick!
1/2 cup chopped coriander
1/4 cup fresh lime juice
Salad
Traditionally just chopped white cabbage but you can also add in carrot, red cabbage, corn – anything you fancy.
Now the fun part, pop everything on the table and let everyone get messy and make their own tacos!
